Cafe Rio was born from a simple dream: to bring the vibrant, soulful flavors of Mexico's fresh cuisine to Colorado. Founded in Glendale by the Ortega family, our restaurant started as a small counter-service spot dedicated to hand-crafted burritos and made-fresh salsas — a place where caferio fans could gather, eat well, and feel at home.

Today, Cafe Rio has grown into a beloved community dining destination, but our roots remain unchanged. We still prepare our tortillas fresh every morning, slow-cook our meats in house, and source local produce whenever the seasons allow. The cafe rio experience is about more than great food — it's about belonging.

2008

The First Tortilla

Marco Ortega opens a small 12-seat counter on Colorado Blvd, serving hand-pressed tortillas and family-recipe salsas. Word spreads quickly.

2011

Expansion & Full Menu Launch

Cafe Rio expands to a full dining room and introduces its signature slow-roasted meats, fresh guacamole, and complete burrito menu — drawing crowds from across Denver.

2014

Community Award Recognition

Named "Best Mexican Restaurant in Colorado" by Denver Food & Drink Magazine. The caferio community begins to form, with regulars dining multiple times per week.

2017

Local Farm Partnerships

We formalize sourcing partnerships with 6 local Colorado farms, elevating ingredient quality and reducing our environmental footprint across all operations.

2020

Pivoting Through a Pandemic

Through the global pandemic, Cafe Rio adapts with online ordering, curbside pickup, and family meal kits — maintaining 100% of our staff and deepening community bonds.

Franchise Program Launch

Cafe Rio launches its official franchise program, inviting community partners to bring the authentic caferio experience to new markets across the United States.
